Cook Time: 12 mins
Serves: ~12 cookies
Ingredients:
- 100g of smooth peanut butter
- 75g slightly salted butter
- 150g soft light brown sugar
- 2 large range eggs
- 1 tsp vanilla extract
- 1 tbsp whole milk
- 140g rolled oats
- 110g all-purpose or plain flour
- 1 tsp of baking powder
- 1 tsp of salt
- 100g milk chocolate chips
- 20g of dark chocolate, melted
- 5g of white chocolate, melted
Method:
- Preheat the oven to 180 degrees celsius. Line a baking tray with parchment paper.
- In a large bowl, combine the butter and sugar with a beater. Add the peanut butter, eggs, vanilla and milk, beat until creamy.
- In another bowl, add the flour, baking powder, salt and oats, and mix until well combined. Add the dry ingredients into the wet ingredients. Combine well.
- It’s easiest to use a silicone spatula for this, so that you can scrape down the sides as you go.
- Add chocolate chips and mix through.
- Divide the mix into 12 equally sized dollops and roll into balls. Place the balls on a baking sheet lined.
- Press the balls with the palm of your hand to form cookies.
- Bake for 12 minutes per batch until just golden. Let cool.
- To make a spider, top each cookie with a dollop of dark choc and use a toothpick to draw spider legs. Add white chocolate to make eyes. Serve.
