Halloween Peanut Butter Cookie Recipe

Peanut butter? Cookies? Say less. These simple + delish cookies are the perfect Halloween treat!

Serves: ~12 cookies 


Ingredients:

  • 100g of smooth peanut butter
  • 75g slightly salted butter
  • 150g soft light brown sugar
  • 2 large range eggs
  • 1 tsp vanilla extract
  • 1 tbsp whole milk
  • 140g rolled oats
  • 110g all-purpose or plain flour
  • 1 tsp of baking powder
  • 1 tsp of salt
  • 100g milk chocolate chips
  • 20g of dark chocolate, melted
  • 5g of white chocolate, melted

Method:

  1. Preheat the oven to 180 degrees celsius. Line a baking tray with parchment paper.
  2. In a large bowl, combine the butter and sugar with a beater. Add the peanut butter, eggs, vanilla and milk, beat until creamy.
  3. In another bowl, add the flour, baking powder, salt and oats, and mix until well combined. Add the dry ingredients into the wet ingredients. Combine well. 
  4. It’s easiest to use a silicone spatula for this, so that you can scrape down the sides as you go.
  5. Add chocolate chips and mix through.
  6. Divide the mix into 12 equally sized dollops and roll into balls. Place the balls on a baking sheet lined.
  7. Press the balls with the palm of your hand to form cookies.
  8. Bake for 12 minutes per batch until just golden. Let cool.
  9. To make a spider, top each cookie with a dollop of dark choc and use a toothpick to draw spider legs. Add white chocolate to make eyes. Serve.
