Christmas Mini Pavlova Recipe
We've put TWS spin on a Christmas classic! Perfect for a hot Australian Christmas, or just any time you want a lil refreshing treat!
Ingredients:
- 2 egg whites
- 110g caster sugar
- 300ml thickened cream, whipped
For topping:
- Berries of your choice
- Passionfruit
- Mint (for decoration)
Method:
- Preheat oven to 150°C
- Line 2 baking trays with baking paper
- Beat egg whites with an electric beater until soft peaks form
- Add caster sugar little by little and beat well between each addition
- Continue to beat until mixture is thick and glossy (this will take around 5 mins)
- Use a spoon to scoop the mixture onto your baking trays and create small discs of your desired size
- Bake for 20-25 minutes or until crisp, then allow to cool completely in the oven with the door open
- Top with whipped cream and add berries, passionfruit and mint leaves before serving. Enjoy!
Makes around 15-20 individual pavlovas
