Choc Coconut Easter Nests
Ingredients:
- 1 ½ cups shredded coconut
- 120 grams milk chocolate
- Cadbury mini eggs, or small Easter eggs of choice
Method:
- Line a flat try with baking paper.
- Heat a large frying pan over a medium heat.
- Place the shredded coconut on the pan and stir until lightly toasted. Be careful as it can burn quickly!
- Take the pan off the heat, and leave the coconut to cool.
- Add the chocolate to a microwave safe bowl, and heat on medium for intervals of 20 seconds until melted.
- Add the cooled coconut to the melted chocolate and stir to combine.
- Using a spoon, scoop around 2-3 tablespoons of the mixture onto the lined tray and shape into a nest.
- Top each nest with 2-3 small Easter eggs of choice.
- Place the nests into the fridge for 3-4 hours or until set. Enjoy!
